Gulten-free, raw, organic, and vegan, some might say that Lydia’s Organic is the healthiest food around. This Raw Green Gazpacho is served best with Lydia’s New Rawkin’ Beet Chips.
Yields 3 qts of soup
Ingredients:
2 ripe tomatoes (in winter, add 1/4 sun dried tomatoes)
4 celery stalks
2-3 peeled cucumbers
2 red peppers
1/2 red onion
1 garlic clove
1/4 cup lemon juice
1/2 bunch cilantro
½ tbs cayenne
1 tbs tamari
1/2 tbs oregano
1/2 tbs salt
¼ cup olive oil
3 cups water
Directions:
Wash all bulk ingredients well.
Cut, dice and lightly marinate the bulk ingredients to bring out their flavor.
Let the mix of ingredients for the gazpacho sit for an hour then start mixing it with the water little by little in a food blender. The friction of the blender makes the temperature rise a little, this helps the flavors blend, but it is still considered raw. Do not over blend!
When all of the gazpacho soup ingredients are mixed together, you can add more water to achieve your desired consistency.
Add the cayenne, tamari, salt, olive oil and lemon juice to the mixture and blend in one last time.
Serve cold.

You can also serve with chopped celery, jicama sticks, sliced cucumber, dark leafy greens or other veggies.
