Recently opened along the beaten path of Calabasas bike trails and the Commons is Pedalers Fork restaurant, bar, coffee shop, and… Bike shop?!
Catering to the biking and health conscious community, we’d recommend dining at Pedalers Fork for Saturday brunch, followed by shopping at the weekly farmer’s market taking place just outside the wooden and brick restaurant.
Pedalers Fork in Calabasas works with local famers to ensure all ingredients used are in season when they set their menu. Currently on their menus is Chef Dan Murray’s recipe for Quinoa Cakes.
Ingredients:
1 Cup onion, Red (chopped)
1 Tbsp Garlic
1 each carrot
1/2 Cup leek, White/light green parts
1 cup hummus (prepared)
4 cup Quinoa, mixed (cooked)
1 cup protein flake
1 tsp Lemon Juice
1/2 tsp Cumin (ground)
1/4 tsp Chili Flake
1 tsp Agar Agar
1/4 cup Canola Oil
Directions:
1. Place vegetables in a robot coup and puree. Heat a saucepan over medium heat, add oil to warm.
2. Sweat vegetable puree until tender with cumin, chili flake, and a small amount of salt. Spread and cool to room temp.
3. Place cooled vegetable paste and remaining ingredients into a bowl and mix well.
4. Portion and shape.
