Radish Salad with Oranges and Sprouts

Prep time: 10 minutes

Yields: 8 servings

Ingredients:

Dressing

2 oz organic apple cider vinegar

2 oz fresh squeezed orange juice

1 tsp raw honey or 6 drops of stevia extract

1/8  tsp fine sea salt

1/8  tsp freshly ground black pepper

2 oz flaxseed oil

Salad

1 cup sliced radishes

2 cups fresh orange segments

4 cups green leaf lettuce or spring salad greens, washed and spun dry

1 cup broccoli sprouts

1 cup alfalfa sprouts

Directions:

1. Whisk together all dressing ingredients except oil. Then, slowly whisk in the oil.

2. Combine salad ingredients except sprouts and toss with half of the dressing.

3. Sprinkle sprouts on top, then drizzle with a little more dressing.

Notes: Any leftover vinaigrette can be refrigerated in an airtight container away from light.

Re-shake before using.
